Ingredients
For the Dough
8 cups (1 kg) all-purpose flour
10 tsp baking powder
1 cup (200g) granulated sugar
3 large eggs
2 cups (500ml) amasi (or buttermilk)
500g baking margarine, softened
1 tsp salt
1 egg (for egg wash)
For the Garlic Butter Filling
200g unsalted butter, softened
4 cloves garlic, minced
2 tbsp fresh parsley, finely chopped
2 tbsp spring onions or chives, finely chopped
1 tsp mixed herbs or Italian seasoning
1 cup shredded mozzarella or cheddar cheese (optional)
Salt and black pepper to taste
Step-by-Step Instructions:
Step 1: Prepare the Dough
In a large mixing bowl, combine the flour, baking powder, sugar, and salt.
Add the softened margarine and rub it into the flour until the mixture resembles coarse crumbs.
Beat the eggs with the amasi.
Pour the wet mixture into the dry ingredients.
Mix until a soft dough forms.
Knead for 8–10 minutes until smooth.
Step 2: Rest the Dough
Divide the dough into 4 equal portions.
Shape each into a ball.
Cover with a clean towel and let rest for 20–30 minutes.
Step 3: Make the Filling
Mix the softened butter, garlic, parsley, spring onions, herbs, salt, and pepper.
Stir in the shredded cheese if using.
