Prepare the fries. Cook the fries in the oven or air fryer for 20–25 minutes, or until crisp and golden. Add a light sprinkle of salt as soon as they come out.
Flavor the beef. Dry the steak cubes well, then mix with 1 teaspoon salt, ½ teaspoon pepper, smoked paprika, 1 tablespoon olive oil, and garlic. Rest for 10 minutes.
Brown the steak. Heat 1 tablespoon olive oil in a heavy pan over medium-high to high heat. Sear the beef for 4–5 minutes, turning until the cubes are browned on the outside and still juicy inside.
Glaze the bites. Add soy sauce, honey or brown sugar, and lemon juice or vinegar to the hot pan. Toss for 1–2 minutes, until the sauce reduces slightly and coats the beef.
Let the meat rest. Move the steak bites to a plate and rest for 5 minutes before serving. For medium-rare, aim for about 52–54°C / 125–130°F, adding more time for a firmer center.
Cook the eggs. Melt the butter with the last tablespoon of olive oil in a nonstick pan over low to medium-low heat. Add the eggs, cover, and cook for around 3 minutes, until the whites set and the yolks remain bright and soft.
Finish with herbs and chili. Top the steak with sliced red chili and parsley. Season the eggs with the remaining salt and pepper.
Plate it up. Serve the steak bites with the fries and fried eggs, spooning over the glossy pan sauce. Add extra parsley for a fresh finish.

Use ribeye for a richer, softer bite or sirloin for a leaner result. Keep the steak cubes similar in size so they cook evenly. A splash of hot sauce or a pinch of chili flakes can be added to the sauce for more heat.
