Ingredients:
2 medium fresh cactus pads (nopales), cleaned and de-spined
1 cup water
Juice of 1 lime
½ cucumber
A handful of fresh parsley or cilantro (optional)
Ice cubes (optional)
Step 1: Prepare the Cactus Pads
Using a sharp knife, carefully remove all spines and rough edges.
Rinse thoroughly under running water.
Cut into small pieces.
Step 2: Prepare the Vegetables
Wash the cucumber and herbs.
Cut the cucumber into chunks.
Step 3: Blend
Add to a blender:
Chopped cactus pads
Water
Lime juice
Cucumber
Herbs (optional)
Blend until smooth.
Step 4: Strain (Optional)
For a smoother drink, strain through a fine mesh sieve.
To retain more fiber, drink it without straining.
Step 5: Serve
Pour into a chilled glass.
Drink immediately for the freshest flavor.

One small glass (about 250 ml) 2–3 times per week can be part of a healthy diet.
